Frozen Lemon Pie

Need an easy dessert? This pie is perfect for summer or winter. It has the most delicious, smooth texture, 
and it is refreshingly lemony! The tasty lemon flavor is sure to be a crowd pleaser.

You will need:
1 package graham crackers
1/2 cup whipping cream
1 can sweetened condensed milk
6 tbsp. butter
2 lemons
1 ice cube tray (without dividers) or a regular pie pan

Crush 1 package of graham crackers in a gallon ziploc bag, using a rolling pin. Melt 6 tablespoons of butter, and mix with crushed grahams. Set aside 2 tablespoons of crumbs.
Spread the remaining mixture in pan and freeze.

Grate rind of one lemon using the small, rough side of the grater. 

Squeeze juice of two lemons, and put in a medium size bowl with the grated rind.
Mix in one can of sweetened condensed milk. Be sure to scrape the can out thoroughly, 
otherwise your pie will be a bad consistency. 
Whip 1/2 cup whipping cream.

Mix into the lemon mixture on low speed, just til combined.

Spread in pan, sprinkle with the reserved crumbs, and place a lemon curl on top.
Freeze for at least 4 hours. To serve, place pan in 1 inch of hot water for about 20 seconds.
