Frozen Lemon Pie

Need an easy dessert? This pie is perfect for summer or winter. It has the most delicious, smooth texture, 
and it is refreshingly lemony! The tasty lemon flavor is sure to be a crowd pleaser.

You will need:
1 package graham crackers
1/2 cup whipping cream
1 can sweetened condensed milk
6 tbsp. butter
2 lemons
1 ice cube tray (without dividers) or a regular pie pan

Crush 1 package of graham crackers in a gallon ziploc bag, using a rolling pin. Melt 6 tablespoons of butter, and mix with crushed grahams. Set aside 2 tablespoons of crumbs.
Spread the remaining mixture in pan and freeze.

Grate rind of one lemon using the small, rough side of the grater. 

Squeeze juice of two lemons, and put in a medium size bowl with the grated rind.
Mix in one can of sweetened condensed milk. Be sure to scrape the can out thoroughly, 
otherwise your pie will be a bad consistency. 
Whip 1/2 cup whipping cream.

Mix into the lemon mixture on low speed, just til combined.

Spread in pan, sprinkle with the reserved crumbs, and place a lemon curl on top.
Freeze for at least 4 hours. To serve, place pan in 1 inch of hot water for about 20 seconds.

Chocolate Chip Andes Mint Cookies


For Christmas, winter, parties, or any time you are hungry for cookies, this is the perfect recipe. The minty-chocolaty taste is sure to be a crowd pleaser.

For Chocolate Chocolate Chip Cookies:

2 1/4 c. flour
1 tsp. salt
1 tsp. baking powder
2 sticks (16 tbsp) butter, softened
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
1/2 c. cocoa
3-4 cups semi-sweet chocolate chips, depending on how much you like. (hint: the more the merrier)

Preheat oven to 375 F. In a small bowl stir together flour, salt, and baking soda. In another large bowl mix together butter, sugars, eggs, vanilla, and cocoa. Gradually blend flour mixture into butter mixture and mix until combined. (lotsa mixing going on around here!) Stir in chocolate chips until evenly distributed. Using a small ice cream scoop, scoop cookie dough onto cookie sheet, leaving a couple of inches between each one. (or just make heaping tablespoonfuls). Flatten the doughballs out just enough so that they will bake more evenly. (If you don't, they get too done on the outside, and not done inside). Bake for approximately 10 minutes. (They may take a bit more or less - just watch carefully!) When there is about one minute baking time left, place an unwrapped Andes mint in the center of each cookie. Finish baking, remove from oven and spread the melted mint as shown in the picture below. Let cool 2 minutes, and remove onto wax paper.

Savory Beef Roast

Who wants a meal that's oh-so-yummy but super easy? (raised hands) Then this beef roast is just what you want! After a very simple preparation, it bakes for about 6 hours, so it makes a great meal to prep before you leave, and eat when you come home!

You will need:

Lots(!) of carrots and potatoes, peeled. Pretty much however many you like!

Beef roast


Cut the carrots in thirds, and the potatoes either halved or quartered.

Place around the roast in a large roaster pan, sprinkling with bouillon.


Mix up the cans of soup with a plentiful amount of bouillon.

Spread over the top, and bake at 325 F for about 6 hours.


Now THAT looks good!!!

Cuthbert's Brownies

-Preheat oven to 350 F.

-Melt 3/4 cup cocoa + 2/3 c. butter (11 tbsp.) in medium kettle.

-Remove from heat.

-Mix in 2 cups sugar
             4 eggs
             1 tsp. vanilla
-Mix well

-Add 1 1/4 cups flour
         1 tsp. baking powder
         1 tsp. salt
-Spread in greased 9x13 pan.

-Bake 30 minutes or until toothpick inserted in center comes out clean.

-Frosting: Melt 1 stick of butter (8 tbsp.) and 1 12-oz. bag of semi-sweet chocolate chips in small kettle. Spread on top of brownies and serve when frosting hardens.
